But what is this tone due to?<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In fact the colour of the oil is not an exact indicator of quality but rather of the <strong>olive variety <\/strong>with which the olive oil has been made and its stage of <strong>ripening<\/strong> and also of the process that has been followed for its <strong>production<\/strong>. For example, a <a href=\"https:\/\/fuenquesada.com\/en\/what-are-the-characteristics-of-100-picual-olive-oil\/\">picual olive oil<\/a> tends to be greener than that made from the <em>hojiblanca<\/em> variety.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">One of the main reasons for the green colour of extra virgin olive oil is the lesser or greater amount of <strong>natural pigments it contains, in this case chlorophylls<\/strong>. On the other hand, carotenoids are those responsible for golden tones. We can obtain <a href=\"https:\/\/fuenquesada.com\/en\/characteristics-green-oil\/\">green oil<\/a> when we work with <strong>olives harvested early<\/strong> as this is when the chlorophylls predominate.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-learn-to-distinguish-green-extra-virgin-olive-oil\">Learn to distinguish green extra virgin olive oil<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">However, when we speak of a <strong>green EVOO we are referring to its fruitiness and taste<\/strong> with its spicy and bitter nuances together with its enhanced intensity and aroma. But how can <a href=\"https:\/\/fuenquesada.com\/en\/how-can-we-identify-an-extra-virgin-olive-oil\/\">we recognise an extra virgin olive oil<\/a>? By tasting it.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Have you ever observed an EVOO taster? Tasters use blue glasses so that the colour of the oil cannot be seen; in this way they will not know <strong>whether the extra virgin olive oil is green or golden <\/strong>and thus not be influenced by the tone.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The only evidence that we have is that the oil extracted from <strong>young olives has very different nuances<\/strong> which make it a <a href=\"https:\/\/fuenquesada.com\/en\/gourmet-olive-differs-oils\/\">gourmet olive oil<\/a>. On tasting it you are transported to a place where the predominate smells and tastes recall other fruits such as bananas, almonds, tomatoes, fresh grass\u2026<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">All these attributes combine to give us the <a href=\"https:\/\/fuenquesada.com\/en\/what-is-the-best-extra-virgin-olive-oil\/\">best extra virgin olive oil<\/a> possible and make it premium EVOO.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">When it is a case of selecting quality products we tend to choose what we consider to be the most <strong>exquisite for our palate, as is the case with green extra virgin olive oil<\/strong>.
